Stuffed Pancake 

Stuffed Pancake with chia jam

Ingredients for 2 people 
150 plant-based milk or water
Chia seeds jam (or regular one)
Foodspring coconut oil 
Maple syrup
Coconut milk 

Pour one tbsp of jam on parchment paper and press it to form a disk (make 4 disks in total). Freeze it for 1 and half hour.  

For pancakes: whisk pancake powder with milk to obtain a smooth mixture. 

Oil a pan with coconut oil and pour a full tbsp of mixture (at low heat). After 1 minute circa, place the jam disk at the center and add 1/2 tsp coconut cream and cover with more mixture. After another minute turn the pancake and finish to cook. Serve with fresh fruit and maple syrup.
