Avocado Boat with turmeric sauce

Ingredients for 2 people 
1 ripe avocado 
2 eggs
salt and pepper
For the turmeric sauce 
4 tbsp of yogurt
Half tbsp turmeric 
salt and pepper 


Cut the avocado in half and remove the skin and the seed. With a spoon remove the flesh to make room for the egg. Place the avocado on the pan with a little bit of olive oil. Cook for 60 seconds. Turn the avocado and pour the egg in the seed hole. Don’t worry if the egg-white spills out. Cover with a lid and cook for 5 minutes circa until the egg is cooked. Remove from the heat and serve with croutons to dip in the egg yolk and turmeric sauce. 

For the turmeric sauce: blend all ingredients in a glass.
