Chocolate plumcake with chocolate frosting
1+1/4 cup flour (regular flour or gluten free)
1 cup di coconut sugar
½ cup cocoa powder
1 tsp baking powder
A pinch of salt
¼ cup olive oil
1 pack of apple puree
½ stick vanilla seeds
4 tsp apple vinegar
For the chocolate frosting
150 g black chocolate
4/6 tbsp coconut or almond milk
In a bowl, mix flour, coconut sugar, cocoa powder, baking powder, salt. Add oil, apple puree, vinegar, vanilla and 1 cup of water. Whisk to blend all ingredients together.
Pour the mixture in pound cake-tin and bake at 170C for 25/30 minutes. Check with toothpick if the cake is ready.
For the frosting: cut dark chocolate into small pieces and melt it in a pan on low heat with almond/coconut milk. Pour it on the cake and serve.
