Sweet potato gnocchi with radicchio and pine nuts
For the sauce: Chop radicchio and cook it in a pan with 2 tbsp olive oil. Add 1 tbsp apple vinegar and cook for another 2 minutes. Keep the sauce aside.
Boil potatoes in salty water for 20 minutes circa (till they get soft). Remove the skin and smash them. Add salt, pepper, nut meg, flour and kneed everything together. Make stripes of dough rolling it on the cutting board covered with flour. Cut the stripes with a knife to obtain small gnocchi. Boil them in salty water for few minutes.
Stir fry the gnocchi in the radicchio sauce and add toasted pine nuts.
