Pomegranate cake

A dessert without sugar? It is possible! How do you like this pomegranate cake sweetened with Eridania’s stevia? To make it even lighter and healthier I decided to make it also dairy-free. For the cream I used cashews, coconut milk and stevia.

Ingredients:
 + ½ cup wholegrain flour
12 tsp stevia
½ tsp baking powder
A pinch of salt
¼ cup almond milk
½ cup pomegranate juice
¼ cup olive oil
¼ cup applesauce
1 tbsp apple vinegar
1 tsp vanilla extract
Cream
Coconut milk120 g
Cashews140 g
5 tsp stevia 
 
For the bottom layers: whisk all the dry ingredients in a bowl and all the liquid ones in another bowl. Add liquid ones to dry ones and blend to obtain a smooth mixture. Divide the mixture into two cake tins 12 cm wide and cook for 28/30 minutes at 165°C. 
 
For the cream: Soak cashews in water for 2 hours circa. Blend them together with coconut milk and stevia and use the cream between the two layers and to cover the cake. Sprinkle with pomegranate seeds.
