Marinated egg yolk


Ingredients for 6 croutons
6 eggs
300 g salt
300 g sugar
Croutons bread
Olive oil
Mix salt and sugar (50% salt and 50% sugar, depending on how many eggs you marinate). Place part of this mix on the bottom of a plate. In the meantime separate the yolk from the egg-white. Place the yolk on the sugar/salt mix and cover it with more mixture. Leave it to marinate for 3 hours and half. Then remove the yolks from the mixture and rinse them very carefully in a bowl with cold water.
Cut discs of bread and drizzle them with olive oil then brown them in a pan. Place a yolk over each disc of bread and sprinkle with black pepper.
