Crispy octopus with potatoes and paprika
- 1 octopus 1,5 Kg circa
- 4 medium-size potatoes
- Half glass coconut milk
- 1 shallow
- EVO oil
- 1 tsp smoked paprika powder
- 2 ladles vegetable broth
- For the octopus : dip the octopus in boiling water holding it by the head, keep it immersed for 3 seconds and repeat until tentacles get curly. Cook the octopus in a steamer for 60 minuets. Then, cut the tentacles and stir fry them in a pan with a little bit of oil until they get crispy.
- For the mashed potatoes : brown the shallot in a pan with 3tbsp of oil. Add diced potatoes, add 2 ladles of vegetable broth and cook for 10 minutes. Add coconut milk and cook for another 5 minutes. Blend to obtain a smooth cream.
- Pour the cream on the bottom of the plate, place 2 tentacles on top of it and add a sprinkle ok paprika.
