Ingredienti

  • 300g tagliatelle pasta
  • 600g pumpkin flesh
  • 100 ml coconut milk
  • 70 ml water
  • 100 g spinach
  • Olive oil
  • Salt and pepper

Istruzioni

  1. Cut the pumpkin into thick slices, season it with oil and salt and bake it at 180 °C for 40 minutes circa.
  2. Once it is ready blend it together with water and coconut milk until you obtain a thick cream. Add some water if necessary.
  3. Cook spinach in a pan with olive oil for 5 minutes circa. Cook the pasta very al dente (2 minutes less than suggested on the box).
  4. Finish to cook the pasta in a pan with the pumpkin sauce adding some cooking water.
  5. Add spinach at the end.
  6. Buon appetito!
