Trout Fillets marinated in orange juice and pistachios
Orange Mayonnaise: beat three eggs with an electric whisk (eggs must be room temperature). Keep beating the eggs with the whisk and drizzle olive oil, apple vinegar and half orange juice. Add salt and pepper.
Marinated Trout: put the fillets in a casserole, add 1 glass of white wine, 1 lemon juice and 1 orange juice, 2 tbsp olive oil, salt&pepper. Cover it with plastic film and let it rest for at least 30 minutes. Roll the fillets in pistachio grain making sure that the entire fillet is covered. Cook the fillets at 180°C for 15 minutes.
Serve with orange mayonnaise.
