Carrot and potato soup with ginger
Ingredients for 3 people
1 big potato
2 tbsp olive oil
Piece of ginger
2 cups water
Salt and pepper
Cook the shallot for 2 minutes with olive oil. Now add the chopped potato and carrots and cook them for 5 minutes.
Add water, salt, pepper and thyme and cook for 15 minutes. Blend until it’s completely smooth.
Before serving add grated ginger and olive oil.
