VIDEO RECIPE: GRILLED SALMON WITH BEET QUINOA AND BASIL SAUCE
I usually cook quinoa in salty water without any additional flavour. As I really like colours I decided to try to colour quinoa with beetroot and the result was amazing. The taste is definitely stronger and it’s perfect with salmon and basil. It is a good idea also to eat with veggies.
Put quinoa in a pan with water and beetroot juice. Boil it until the quinoa absorbs everything. Turn off the heat and cover it for 5 minutes.
Put 2 tbsp of oil in a hot pan and cook the salmon fillet 2 minutes and half per side.
For the basil sauce, place all ingredients in a blender and blend for 60 seconds. Place the quinoa on the bottom and put the salmon fillet over it. Sprinkle the basil sauce.
