Vegetables noodles with coconut milk
Brown the diced shallot in a pan with the ginger paste. In alternative to ginger paste you can use fresh grated ginger. Add diced veggies and cook for 3 minutes. Pour the coconut milk in the pan and cook for an additional 4 minutes on low heat. In the meanwhile, boil noodles in salty water, drain them and stir-fry them in the pan together with veggies. Top it with black sesame seeds and serve.
