Cherry and sweet potato salad

Cherry, sweet potato, grapefruit and pecan for a tasting summer salad

Ingredients for 4 people
2 sweet potatoes
1 tbsp chia seeds
150 baby spinach
20 pecan nuts
20 cherries
Half pink grapefruit
Olive oil
Mustard
Balsamic vinegar
Procedure
Boil sweet potatoes for 20 minutes and skin them before cutting them into cubes.
Cut in a half the cherries and remove the seeds. Open the grapefruit and remove only the pulp.
Sauce: in a small bowl mix 4 tbsp olive oil, 2 tsp mustard, 1 tbsp balsamic vinegar.
Put all the ingredients for the salad into a bowl and season with the sauce.
